Perfect for fall or any time of the year, these yummy pumpkin bars are packed full of antioxidant beta carotene, the nutrient that gives pumpkins and carrots that delightful orange color.
Ingredients & Directions
2 cups sugar
1 cup oil (preferably non-GMO – melted coconut oil works great)
About 15 oz pumpkin (fresh or canned)
2 cups flour (all-purpose or pastry)
2 tsp baking powder
2 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
1/2 tsp ginger
1/4 tsp cloves
Preheat oven to 350 degrees F. Vigorously mix sugar, oil, eggs and pumpkin until creamy. Mix in baking powder, flour, baking soda, cinnamon, ginger, cloves and salt. Pour into greased baking pan. Bake for 25 minutes, checking with a toothpick to make sure not gooey. Cool before frosting with cream cheese frosting, if desired.
Makes from 20-40 bars depending on how big they’re cut!
